Healthy Recipes And Precious Times Spent With My Momma

Spent my day off hangin’ with my momma. I made her breakfast, took her grocery shopping, bought her cold-pressed juice and prepared her lunch. Can you tell how much I love her? I love my daddy too he’s just super annoying to hang out with that’s all (haha). By the way, he wanted me to mention him in my blog “tell them his name is Sirous,” he said. Crazy. Anyways, here are the recipes for you. I miss you all so much by the way! Auntie Pouneh, Laura, Randy, Jose and family, Hiromi and Olivier, Akiko and Lifa, Mr. and Mrs. MacLean, Dave and Maria etc. etc. all of ya!

Turmeric, Zucchini and Carrot Muffins (vegetarian, can be gf, dairy-free, refined-sugar-free):
2 free range eggs
2 tbsp olive oil
full 1/2 cup of grated carrots
full 1/2 cup of grated zucchini
1 cup almond flour
1/3 self-rising flour (use a GF alternative here to make muffins GF)
1/4 cup oat milk
1/2 tsp baking soda
1 tsp apple cider vinegar
handful of raisins
big pinch of salt, pepper, red chilli powder and turmeric (little more turmeric won’t hurt)
small bunch of torn italian parsley

Mix everything together, pour into a greased muffin tin, bake at 160 degrees for 20 or so minutes. Muffins ready when golden on top and fork comes out clean. Let cool before nomnom.

Beetroot Energy Salad (raw, vegan, gf, hipster):
2 large beetroot, peeled and grated
handful of raw pumpkin seeds
handful of raw sunflower seeds
juice of half a lemon
1 tsp soy sauce
1 tsp olive oil
pinch of salt and pepper

Mix together and enjoy – das it!

Dinner at the Dazzis

As promised, Daddy Dazzi’s famous lasagna then Daddy Dazzi’s famous risotto. Washed down with Mama Dazzi’s humble desserts, mocked aplenty by Daddy Dazzi for their simplicity (hehe). Hashtagmarriage. Hashtagdelicious. Hashtagfoodbaby.

Vegan Dinner With A Side Of Deer Meat

Vegan followers don’t be offended! And meat-enthusiasts don’t run away! (Or do-what are you doing here? I joke I joke). Last night I had the most delicious vegan dinner prepared by my dear sister and yoga sensei Akiko Tanabe. And after, I almost hit a deer. These animals are taking over.

Turmeric couscous
Eggplant and green-bean tomato medley
Cucumber tomato and mint quinoa salad
Carrot ribbon, walnut, raisin and soft-dried apple salad
Lettuce, dried figs, toasted sunflower and pumpkin seeds green salad

Italian Night and a *Stolen* Recipe

If you follow my blog’s Facebook and/or Instagram accounts then you might know that I made Italian food for my Japanese friends last night. Now, how does a Persian-Kiwi learn to cook Italian? By working jobs. At 15 I worked at La Porchetta, a chain Italian restaurant then at 17 I waitress-ed at iconic Cafe Valentino which was destroyed from the devastating Christchurch earthquakes whilst I was living in Israel. When Cafe Valentino reopened on St. Asaph Street, I immediately returned, this time as Duty Manager. That’s right, GIRL BOSS. I loved the actual boss, I loved the head chef and I loved the pizza (not specifically in that order).

Working at Cafe Valentino, I learnt so much from Chef Karren. Not only is she extremely talented but also so utterly passionate and committed. To me, there is nothing more beautiful than a person who sacrifices day in and day out for their art.

During “the calm before the storm” (quiet mornings before lunch) at Cafe Valentino, I’d often have the opportunity to watch the chef’s preparations. Though I couldn’t ever know exactly how they made what they did or what exactly went into it, let’s just say, I can take a pretty accurate stab in the dark. Today I share with you an idiot-proof *stolen* recipe from the famous Cafe Valentino:

Tomato Freakin’ Bruschetta.

1 medium red onion, chopped small
about 3 medium tomatoes , chopped small – I used a punnet of mixed colored tomatoes whcih included red, maroon, green, yellow and orange ones.
bunch of fresh basil leaves – chopped small
dollop of good quality olive oil
dollop of good quality balsamic
pinch of sea salt
pinch of pepper

Bread – Cafe Valentino would use freshly baked ciabatta, I used store-bought French baguette.

Finely chop vegetables and herb.

Add a dollop of oil then balsamic – I guess Cafe Val used a balsamic reduction but I ain’t got time (or skills) for that.

Season with a little salt and pepper.

Mix well then refrigerate (you can do this well in advance to serving, if you wish).

For serving, slice bread, toast in a toaster or toaster oven then top each bread with big spoonfuls of tomato/onion mixture letting it fall everywhere (as in on the plate).
***HOT TIP from Rosie Blakely of Gaikokumama: “I usually cut a fresh garlic clove in half, rub the open-side over the bread, then lightly toast by frying the bread with a little olive oil. Yummy. Try it if you fancy!”

Boys (and girls) and BBQ

At home, I eat mostly vegan/vegetarian. With my Japanese friends, I’m sorta obliged to eat meat because I don’t want to offend them when they have placed much care and time in either taking me to a favorite restaurant or preparing me a special dish. There, I suck it up like a big girl and wash it down with a kale smoothie, later. I’m serious. However; I don’t mind eating locally hunted deer. This is because, in the countryside, there are SO many of them and they often get themselves killed or kill people through severe road accidents. They just run everywhere. Venison is pretty lean and has very little fat to it. I enjoy the taste. Last night, the boys cooked the girls (Aki and I) a delicious BBQ and we loved it. I made a platter featuring hummus (recipe HERE) organic veggies, nuts, blue-cheese, olives, crackers, prosciutto wrapped bread-sticks and chia-seed corn-chips. My super talented friend, Lifa (the Israeli wood-worker) made his beautiful wife a gorgeous grocery box and for the our BBQ, a chimney coal starter.

Cauliflower Rice Sushi

21st century health-freaks are coming up with a whole lot of crazy things and I love it. A while back I made cauliflower base pizza (recipe here), of course it didn’t taste like bread bread but it was still yum and nice to try something different. Last week I made cauliflower rice sushi. They definitely still taste like sushi – I guess because of the combination of pickled ginger, soy sauce and seaweed. I really recommend you try it, it’s such a healthy alternative to white rice sushi. Basically, you make regular sushi but you just use cauliflower rice instead. This is a really basic #norecipe for that:

1 medium cauliflower
1 tbsp rice vinegar

First remove the cauliflower’s stem and leaves then using a knife, chop into small pieces.

Place chopped cauliflower in a food processor or blender (I used a blender, it was not easy but it was not impossible either) and blitz until crumbed.

Place crumbed cauliflower in a microwave-safe bowl, cover with kitchen wrap and microwave for 6 minutes at 500W.

Once cooked, add the rice vinegar, mix with a spoon and let cool slightly before beginning to sushi.

My tips: use a spoon or your hands to press cooked cauliflower in order to remove some of its moisture. Also, try to roll your sushi as tight as possible (without breaking it).

Brown Rice Sushi For Lucy

For me actually but that title rhymes. And my friend Lucy requested this.

I’m no sushi expert. Believe it or not, living in Japan doesn’t automatically make you one. Though I will say, here, sushi means raw fish on a little thingy of rice with a layer of wasabi in between only. Not this. This is maki sushi, I believe.

Ingredients:
1 1/2 cups uncooked short-grain brown rice
2 cups water
1 tbsp rice vinegar
pinch sea salt
nori (seaweed) sheets
your favorite fillings cut in strips (I used raw salmon, orange capsicum, lettuce and avocado)
a rolling mat

Rinse and drain rice, place into a saucepan and pour in water.

Let soak for as long as possible but if you don’t have the time, 30min is fine.

Cook rice over medium heat until done? Sorry not sure how else to put it..follow packet instructions? Or taste some to check.. you may need to top up the water once or twice (about 35 min).

Let rice cool until warm then mix in the vinegar and salt. Rice should be slightly sticky now.

To roll the sushi, lay a sheet of nori, rough side up, on your rolling mat. With wet fingers (I find its also useful to have a damp towel nearby), firmly pat a thick, even layer of brown rice over the nori, leaving  top edge about 1/2-inch deep uncovered with rice.

Assemble your fillings in a line along the bottom edge of the sheet.

Now we’re ready to roll (both literally and figuratively) so fold the bottom edge of the sheet up, enclosing the vegetables, and roll roll roll your mat? If you didn’t F up, you should have a thick cylinder thing by now.

Here I gently wrap the mat around the roll and squeeze it not-so-gently one more time – for good luck’s sake.

This recipe should make 3 rolls. Cut each roll into 6 pieces for serving.

Six Delicious and Filling Healthy Lunch Ideas

Hands up if you’ve started your diet or life-style change with a healthy breakfast and a plain salad lunch only to break it with a hangry binge come dinner? Right, happens to the best of us. Growing up, I always had a big lunch. That’s how Iranian’s do it. Kebabs or stews on rice for lunch and something light, a salad or a small sandwich for dinner. There’s no better feeling than sleeping on a light stomach and by night-time, your lunch will be burnt off and digested. This also goes for sweets or dessert. If you must have them, have them during the day. Here are 6 of my favourite delicious and filling healthy lunch ideas:

1. Brown Rice Onigiri

Fried brown rice balls. With salad. So easy. Brown a little onion with a little oil in a frying pan, add 1 cup of carrot/corn/peas mixture, fry little longer. Crack a free-range egg or two in it, mix in. Add two cups cooked brown rice. In a small jar, mix 2 tbsp soy sauce, 1 tbsp smooth peanut butter, crushed ginger, crushed garlic, salt and pepper. Pour over. Cook until hot and steamy. Shape into balls using a plastic wrap. Serve with a nutty salad.

2. Frittata

Frittata is super filling and great for left-overs. Be creative with your vegetable, herb, cheese and nut combinations. Serve with salad. Recipe HERE.

3. Wholewheat Couscous Salad

Like frittata, couscous salads can have absolutely anything in them. Get creative with a colourful mixture of raw vegetables, nuts and seeds. Use wholewheat variety. Delicious! Recipe here, here and here. Boiled egg, optional. Truffle/bliss ball recipes here, here and here.

4. Grilled Fish, Tofu and Salad

This ones for those who eat fish. A big piece, pan-fried served with raw tofu on a simple green salad. Will keep you full forever. Okay, that may be an exaggeration but you get my drift.

5. Brown Rice Salad

Basically a deconstructed brown rice onigiri. A delicious mix of raw and roasted vegetables, dried fruit, nuts and herbs. Recipe HERE.

6. Healthier Potato Salad

Mayonnaise free, potato salad. Dressed with avocado and yoghurt. Healthy fats and probiotics for the win. Enjoyed with a side of raw snap peas and cherry tomatoes. Recipe HERE.
