How to pimp your rice paper rolls

Last night my friend Mina and I cooked for our other friend, Mr O, who by the way, is a magician. Anyways, we prepared an Asian meal of green curry and fresh spring rolls. Thankfully, O-san approved.

Fresh spring rolls, AKA the easiest and most exciting way of consuming raw vegetables have featured on iaccidentlyatethewholething before. However; today I wanted to teach you a perhaps obvious skill for pimping them via the amateur illustration below.

Basically, you roll 3/4 of the way then add your desired toppings in the form of a neat line to the last quarter, then close. Congrats! You’re officially pimping on level pro.

Toppings can include:

prawns
individual corn pieces
green peas

and if you’re feeling really creative:
loveheart and/or flower shaped carrots (done using a small cookie cutter)

Mini vegan cheesecakes

Finally, I made my first vegan cheesecakes in Japan and since I don’t have a food processor here, I used my $20 blender (slowly/cautiously) and guess what? It worked…wonders!

crust:
1 cup of raisins (cos dates are expensive as shizz)
2 cups of raw walnuts

“cheese”:
1 1/2 cups of raw cashews (soaked for 4 hours)
1/2 cup full-fat coconut milk
1/3 cup coconut oil (melted)
1 tsp pure vanilla essence
1/2 cup pure maple syrup

topping:
Whatever your little (sorry, BIG) heart desires – I used homemade blueberry syrup

First, blitz crust ingredients together in a food processor or, if you’re feeling lucky, a shitty blender until mixture starts coming together.

Using your fingers, carefully smoosh crust mixture evenly into a greased silicon 6 slot muffin tray.

Wash your food processor then process all of the filling ingredients together for about 5ish minutes or until mixture becomes nice and creamy, then distribute evenly on top of crust mixture.

That’s it! Cooking time finished! Now all you have to do is pop em into a freezer.

For best results, freeze overnight or for those of you that just can’t wait, 4-5 hours should do the trick.

To finish, top with fresh fruit or something equally instagramable/delicious.

Allow 10-12 minutes of thawing time or eat frozen if you just can’t wait!

Fig, almond and cacao balls

3/4 cup almond meal
3 soft dried figs (or alternatively, 3 soaked hard dried figs)
1 tbsp melted coconut oil
1 tsp raw honey
1 tbsp raw cacao powder
1 tbsp shredded coconut (plus a little more for coating)
1 heaped tsp all-natural peanut butter (I used crunchy)
pinch of cinnamon
a few drops of natural vanilla essence

Whizz all ingredients together in a food processor.

Using your hands, roll into balls then coat in coconut.

Das it!

Enjoy with your fave hot bevy.

Social media isn’t real but these raw cheesecakes are!

Don’t allow the alluring charm of these cakes to fool you. I am not happy baking in the kitchen, I am in bed with a centipede bite. But, I am also surrounded by much love and support and I’m typing on a macbook etc etc so I’m not completely hopeless. Things could always be worse. I could have been bitten by a snake or a bear – not unlikely in my neck of the woods. Anyways, my condition shall deprive me of baking (in this case: not baking) for some time. So, since I’ve been lucky enough to gain a 100 or so new followers as of recently (yep, I’m bragging), I’d like to take this time to re-introduce my healthy, raw, vegan AND idiot-proof cheesecakes.

figalicious definition makin’ me go loco

Don’t worry, I’m not about to quit my day job! Here’s the good news though, THE FIGS HAVE RIPENED and hallelujah! THEYRE JUST AS DELICIOUS AS I THOUGHT! Sorry for the caps. Clearly, I’m a little over excited. So, if I haven’t already mentioned, I am living in Okayama AKA the ‘Fruit Kingdom’ of Japan. How convenient is that? Anyways, recently I’ve completely changed my breakfasts. There’s been a lot of talk/research about eating raw fruits on an empty stomach (some people think it a load of bollocks whilst others swear by it). I myself, fall with the latter. Of course not of blind faith – I’ve been having raw fruit-only breakfasts for the last FEW days and already, I’m feeling a difference! Honestly people, I feel great. You too, should try it! Deli, if you’re reading this, please give it a go! You might think that after an hour or so your stomach will start grumbling and eating you from the inside out but it’s actually the opposite! I’ve never received so much energy from any other breakfast! Not even oats! Sorry, too many exclamation marks for a paragraph on fruit but I feel so strongly about my new discovery that I just cant help myself! I really don’t think I’ll ever have anything else for breakfast – well maybe pancakes but they can be the once in a lifetime (and by lifetime I mean tomorrow) exception! ! ! ! !!!! I

Excuse me while I move to a tropical island to become one of those women who just eat 20 bananas a day.

i got 99 problems but a peach aint one

My lovely friend Paige and I went peach picking today! And goodness were they delicious. I wish you could all taste how juicy and sweet these peaches were! No wonder they’re so expensive! They’re taken the utmost care of and they’re Ginormous!
If you’re in/around Okayama be sure to try one or four (yes I ate FOUR) for yourself. But where you ask? Nishiyama Farm, I say!

PS this is the very first time I’ve posted a picture of myself here. So, just prepare yourself you know, before you know it i’ll be hashtag outfitoftheday-ing all over the place.

raw blueberry and apple jam

Yesterday I went blueberry picking at North Village in Shoo Town (300 yen for 1 cup + one or ten cheeky testers whilst picking) with my beautiful neighbour and her delicious baby whom by the way has been making me insanely clucky! Japanese babies are so scrummy!! Today, we made raw blueberry and apple jam – so healthy and supa easy! Please try it and let me know what you think! FYI, this recipe is naturally free from refined sugar, gluten and dairy.

2 cups fresh blueberries
1/4 cup natural apple juice
2 tbsp pure maple syrup

2 tbsp chia seed

In a food processor or blender, mix together the blueberries, apple juice and maple syrup until  well combined and chunky.

Pour mixture into 1 or 2 jam jars then add chia seeds.

Mix mix mix thoroughly.

Refrigerate for a few hours before spreading on hot toast or mixing through greek yoghurt -yummy!
