Guys, this night at the symphony was definitely the best night of my life. Really. It may seem melodramatic but it truly was the happiest I’ve ever been. Everything was perfect. Just like the movies. Ah, I am so lucky. My heart is bursting.

This is Gaylord Opryland Resort and Convention Centre. It’s a multimillion dollar establishment in the form of a giant glasshouse featuring canalboats, waterfalls and other extravagant things. It is also very easy to get lost in. So romantic, I actually cried here. Really. But for other non-romantic, overemotional reasons. image-png-5

Doing all the American things, I went to a hockey game. It was cold and it was awesome! I loved it so much. I loved it because I was entertained the whole night. Every few minutes there was a song, or a movie-clip or a random sound affect played. Sooo cool! I haven’t ever experienced sport like this.

Date cake. As in the fruit, not romance. Unless I’m having a date with a bear or a wild boar in which case, it could be that cos I’m pretty sure I saw a bear yesterday. Anyways, it’s free from gluten, dairy and refined sugar but not eggs. Because I love eggs. Free-range of course.

4 free-range eggs
1 cup chopped dates
1/4 cup of coconut oil (melted)
1 1/2 tsp baking soda
1 tsp apple cider vinegar
1 cup of ground almonds
1 cup of rice flour
1 tsp cinnamon

to decorate: walnuts and dark chocolate

Preheat oven to 160C

Blend eggs, dates, oil, baking soda and vinegar together (in a food processor or blender).

Transfer to a large bowl and fold in almonds, flour and cinnamon.

Pour mixture into a greased tin and top with walnuts and dark chocolate

Bake for 25-30 minutes or until the fork comes out clean.

Enjoy hot or cold or in between.

PS I initially topped this cake with freeze-dried strawberries but they burnt in my toaster oven! So, I picked them off and shoved more walnuts in their place (hehe) hence the berry absence in the last picture.

The Intern: A Movie Review

Building on from my Valentines Day post, I think Nancy Meyer’s new movie, The Intern makes a suitable first date film and that is all.

In my opinion, it is the baby-food of the movie world. That is, it’s easily digestible, in fact, watching it, you do not need to use your brain at all and often times, flavorless and monotone. Except, for the occasional sweet blueberry or two (let’s call them Zack Pearlmans) that find their way through, The Intern doesn’t have much going for it at all. Why? Well, I’d say, watch it for yourself and you’ll know but since I don’t like wasting your time (oh no she didn’t) I’m-ma just go ahead and tell you:

1. It is trying too hard to be cool. Packed to the rim with modern stereotypes (hipster office-space, stay-at-home dad, career woman vs. judgemental stay-at-home moms, sickly adorable child, social media, social media, social media), it’s almost uncool.
2. Unrealistic relationships. SPOILER ALERT: her husband cheats on her and they get back together as if he’d simply misplaced her hairbrush. Sure, these things happen and people resolve their issues, they forgive and forget but not that soon? Surely, not?
3. It’s too long. Thirty min shorter and it could have been good.

To close on a good note, Anne Hathaway’s outfits, her office-space and De Niro’s face are pretty cute.
