Do you remember how a few posts back, I confessed that I wasn’t really a chef? Well, this is a perfect example of that. Tonight I cooked vegan curry with a ready-made paste (gasp) AND it was delicious. Here’s how:
STEP ONE: gather your ingredients
1 preservative-free Thai curry paste
1 small can coconut milk
1 onion
3-4 small potatoes or sunchokes
1 large carrot
1 small broccoli head
some snap peas
1 punnet white mushrooms
(all veggies chopped small-medium)
1/2 cup raw peanuts
small bunch of fresh parsley or coriander
STEP TWO: heat a pan, add paste, 1 cup coconut milk and 1 cup water, bring to a boil.
STEP THREE: add onion, sunchokes and carrots then cover and cook for 15-25 minutes.
STEP FOUR: add broccoli then cover and cook for 5 minutes.
Step FIVE: add snap peas and mushrooms and cook for a further 2-3 minutes.

TO FINISH: top with peanuts and herbs.

Wow how did you manage to get Thai paste and cilantro? Must have been pricey haha :P

Not at all! Cilantro from my neighbor who grows it and Thai paste you can buy from international store for 150 yen

150 yen…that’s not bad at all! And it’s so lucky that your neighbor grows cilantro. I can’t live without it, but it’s always a bit tricky to find when I’m in Japan. If I decide to live in Japan I’ll probably start having to grow some myself hehe

Actually, I just got back to Vancouver because I have a job I need to tie up. (I’ll be catching up on Japan-related posts for a while though. I have so many photos!)
I was there for a couple months to basically figure out what I want to do next with my life. I’ll be returning in a couple months, and probably will live there for a while. Don’t know for how long yet, though!

Haha oh I love that stuff! They have big bags of the cranberry vanilla one at the Costco here. As awesome as Japanese food is, there are definitely things I miss. Cereal is one thing…and hummus :)

I’ve never found Lara bars over there either, and good alcohol like ouzo/arak…but the thing that maybe gets me the most is the lack of real hot sauce, spices, and things like lentils and chickpeas. How do people live without them?!

You either can’t find what you want (where are the beetroots and the apricots?!) or else if you do, it’s 5 times more expensive than it should be!

I know…nut butters are unaffordable. And the whole point of loading up on oatmeal and beans is that they’re cheap, but in Japan they’re a luxury item! But…then again in Vancouver a bag of real Japanese rice is $50, it’s almost impossible to find any nori other than Korean nori, and anpan is made in Chinese bakeries so there’s often lard in it. I want everything, everywhere! Hehehe :P

Yes, tofu is especially amazing here and edamame!! Mmmmm I love baking with okara (soy pulp) I’ve decided it’s the thing I will miss the very most about Japan lol
