1 can of additive free, 100% natural diced apples
3 free range eggs
1 3/4 cups wholemeal flour (use 2 cups almond meal if GF)
1/4 cup oat bran (use GF bran if GF, well duh)
1 heaped tsp baking soda
1 tbsp apple cider vinegar
1 tsp ground cinnamon
1/4 cup coconut oil (any oil will do)
2 tbsp honey or maple syrup
1/2 cup chopped walnuts
Preheat oven to 180C
Chuck all ingredients (except walnuts) in a food processor and whizz until combined
Add walnuts and pulse to combine
Evenly divide batter between a greased muffin tray
Bake for 30 min or until the fork comes out clean
