mini apple pie “donuts”

For the past week I have been intensely (to put it mildly) craving donuts. Plain, chocolate, caramel, SALTED caramel, vanilla, custard, lemon curd, jam/jelly-filled oh God, at one point, I was even craving maple BACON donuts and I’m vegetarian! After a quick search over the internet, I came across Jaime Oliver’s “Mini Vegan Donut” recipe. Although the ingredients used didn’t do it for me (dairy-free margarine, soy milk, sunflower oil, plain flour, caster sugar, icing sugar etc etc) the main picture of the lady in blue holding a paper bag of mini donuts spun my head/stomach/heart into an ecstatic frenzy (to say the least). So, with a little imagination and a lot of willpower I resisted a processed/oily/sugary donut and whipped up these delicious (but healthy – yes such a thing exists) raw mini APPLE PIE (I know, I chose a damn good flavour) donuts instead (DISCLAIMER: obviously don’t taste like actual donuts but hit the spot nonetheless).
1 cup grated apple
1 1/4 cup almond meal plus a little more for dusting
6 medijool dates
1/2 cup unsweetened desiccated coconut
2 tsp cinnamon
1 heaped tsp honey
1 tbsp nut butter

Place all ingredients in a food processor and blend for a minute or so until the ingredients begin to stick together like dough.

Using your hand form small balls – feel free to wet your hands to help prevent sticking as mixture is quite sticky.

To finish, coat the balls by rolling them in the remaining almond meal.

Refrigerate for 2-3 hours before nom nom as donuts are quite soft and need to harden up a little (as do the majority of us).

  1. These look delightful. This time of year resisting treats high in saturated fats and processed sugars is my greatest challenge. I wonder if almond flour will work as well. Hmmm.
